Using last nights Chapati

Many a times extra chapatis are prepared and some are left over from the previous day. And thrown out in the morning because no one wants to eat them.

First of all, for those of you who don't know what chapati is, find out over here.

My mother calls these Indian quesadilla. I simply feel that this is one of the simplest ways to fill the stomach!

So firstly the ingredients. Nothing much is needed.

1. Cut up the vegetables. I have used here tomato, capsicum and onions. Lay out the roti. Cut up the cheese slice into little strips.

2. Lay the ingredients as illustrated below.

3. Serve hot, eat hot!

Thanks for reading,
XO Ayesha

My mom usually fries last nights' chapatis and they taste just like parathas. :)

  8. Um, Chapatis are my one of my favourite foods but I haven't eaten them in ages. My dad is from Goa and my family over there make the best chapatis ever so anything I eat here in Australia just cannot compare!

    Where abouts are you from?
